Let the cozy season begin! Here is my contribution to cozy fall cooking. (It includes apples! Totally an autumnal flavor!)
*Preheat oven to 350F.
*Chop up an onion and a couple apples, toss with 1 Tbsp of olive oil (or whatever) and some seasonings.
*Spread on a pan and cook for 15-20 minutes.
*Toss some leafy greens with another 1 Tbsp of oil and seasonings.
*Spread the greens out over the onion & apple blend, add some cheese on top (I like feta, but the cheese is for flavor; it doesn't need to do anything in the recipe except taste good).
*Cook for another 15-20 minutes.
*Yum! (It will refrigerate and reheat relatively well for a few days.)
The Backstory, because cooking blogs always give the story and I always skip it, but hey, why not?
A few years ago I had a CSA share and got some swiss chard and (after searching the internet for 'easy swiss chard recipes,' probably) found a handy recipe that works pretty well for any hardy leafy green as long as you like onions and cheese. The recipe did not include apples, but mixed the onions with chopped swiss chard stems. Also delicious!
Except that when I don't get them handed to me in a CSA share, the idea of washing and chopping chard is A Lot. So I tend to just buy the pre-packaged baby kale, which works great except there are no stems. And you can make the recipe with just onions, but I happened to have apples from the trail lunches we got hiking, so I figured why not?
Okay, mostly I figured that whether it worked or not, it would be fun to post about, but it turned out surprisingly well!
