Great news! Once they've been separated, the individual strands can definitely be used for crochet. They are delightful to work with! Soft and squishy, and I think this will be a lovely, warm, stripey blanket!
Most okay-est news! I'm halfway through the un-plying -- four skeins done, four to go. It's sure been something so far. Definitely an interesting new experience, but at this point not one I'd be excited to do again.
Most lol news! If my math is correct (and history shows it almost certainly is not), eight skeins of yarn will not be enough for this blanket. Technically I could un-ply more yarn after the eight, but I do not want to do that. (my brain, thinking about un-plying more yarn: noooooooooooo!!!!!!!!!!!!) So this blanket may end up with a different yarn worked at the ends to make a 'border' of sorts. Who knows! Surely not me!
