YES! I have limited kitchen patience, but I love caramelized onions. Here is my "recipe," such as it is:
*5-6 yellow onions, sliced (really however many you want / will fit in your crockpot / you are willing to slice up)
*3 Tbsp butter (about 1 Tbsp per two onions, or however much you want based on how much you like butter)
*1 tsp brown sugar (probably optional, but A) I really like sugar; and B) it makes them a little darker-colored, balancing out some of the washed-out-ness that happens when stuff is in the crock pot for ages)
*1 tsp camp mix (a blend of salt, garlic, & pepper; alternately, whatever seasoning you like)
Put everything in the crock pot on low for a loooooooooong time. At least 12 hours. Probably less than 24. I left mine for about 15 hours, then took the cover off and turned it down to warm (the lowest temp setting on mine) for another 3 hours to let some of the liquid evaporate. They freeze pretty well, depending on what you want to do with them afterwards.
