Back in May I made a food, and over the weekend -- having eggs which I did not want to waste -- I decided to try it again. Except I didn't have any sweet potato puffs, and I sort of wanted something sweeter.

(Yeah, apparently I don't really like cooking except as an extension of that thing when you're a kid and you just mix a bit of everything into one dish to see what happens? I used to love that game!)

Anyway, based on my kitchen survey of 'what do I have around that sounds good that I won't feel guilty about if this turns out awful and I throw it away,' I combined these ingredients:

1 cup pancake mix (one of those all-purpose pancake and baking mixes)
5 eggs
1 cup milk (okay, it was half and half mixed with water; close enough)
2 Tbsp oil
1 tsp Pie Spice
2 slices mozzarella cheese (ripped into small pieces -- I thought the cheese would help everything stick together but also not be too cheesy, because mozzarella)
2 packets of instant oatmeal (maple brown sugar flavor, which is great, but which I really only had around in case I needed a quick snack at work, where I had access to instant hot water and enjoyed having an excuse to get up from my desk)

And then I poured it in a pan and baked it at 375F for 20 minutes.

*It smelled nice while it was cooking, a real plus!

*It tasted good when I ate it the first day. There is zero cheese flavor (probably a good thing). The eggs and the oatmeal separated more than I expected, which was an interesting development.

*I meant to try it re-heated yesterday, so that I could offer a full report today, but I did not! Today, then. Or not! However the mood strikes.
